The weekends are such a great time to be able to relax, spend time with your loved ones, and reflect on the past week. Did you accomplish what you set out to? What were the best parts of your week? What better way is there to spend a weekend morning with your family- than by gathering around your kitchen table sharing stories and a homecooked breakfast that you made with love?
Well, allow me to help you make it extra special by trying this fluffy pancake recipe I’d perfected for my own family over the years!
It is both easy to make and incredibly delicious.
I intentionally set out to find the best, most soft and flavorful pancake recipe years ago. Pancakes are one of my personal favorite breakfast foods to make during the weekends. While there is nothing wrong with preparing storebought pancake mixes, I found that they always cooked flat and were slightly dry. So, I tried a bunch of different pancake recipes from scratch and with several of my own alterations to satisfy my family’s tastebuds, I found one that has proven to be the fluffiest and scrumptious.
No buttermilk necessary, and you likely have these staple ingredients already in your refrigerator and pantry.
Let’s get started!
Ingredients
(Makes 6 large pancakes)
- 2 cups all purpose flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1/4 cup sugar
- 1 tsp salt
- 1 1/2 cups whole milk
- 1/4 cup white distilled vinegar
- 2 eggs
- 1/4 cup melted butter
- Olive oil cooking spray
Directions
- In a small bowl combine whole milk and vinegar. Place to the side for 10 minutes, allowing it to sour.
- As you wait on the milk mixture, in a large bowl combine the following dry ingredients: flour, sugar, baking soda, baking powder, and salt. In a small bowl whisk together eggs.
- Add melted butter and eggs to the milk mixture and whisk together until smooth.
- Pour milk mixture in with dry ingredients and whisk together until no lumps are present.
- Heat skillet on medium low heat and spray a coat of olive oil cooking spray. Pour desired amount of batter to skillet; for larger pancakes about a 1/2 cup each pancake. Be sure to that heat is not too high and batter is able to cook thoroughly without burning. Flip pancakes over when small bubbles begin to form at the top and continue to cook until done. Repeat steps for each pancake, ensuring that you spray with olive oil in between each pancake to prevent from sticking.
