Get a Taste of Philippines: A Step-by-Step Guide to Making Authentic Beef Sinigang Recipe (Filipino Tamarind Stew)

This dish is one of my absolute favorite traditional Filipino meals to make for my loved ones. In fact, whenever my husband returns home from deployments, or training, Sinigang is often the requested welcome back dish.

What is it? Sinigang is a hearty tamarind-based sour stew that is a staple dish among Filipino homes. Tamarind is a tropical fruit widely used in Asian dishes.

While there may be some variations in the ingredients used from region to region, it all shares the same sour soup base and is loaded with vegetables. Call it a Filipino comfort food, if you will.

Let’s get started!

Ingredients

  • 1.5 lbs. stew meat (beef)
  • 1 medium onion (diced)
  • 2 medium tomatoes (diced)
  • 1 bunch bak choy (cut bite sized)
  • 16 oz. radishes (sliced)
  • 3 cups green beans
  • 1 package Mama Sita Sinigang Sa Sampalok Mix
  • 1-2 tsp fish sauce (patis)
  • Salt and pepper to taste
  • 10 1/2 cups water
  • 6 oz. Okra (optional)

Instructions

  1. Wash and prepare vegetables and set aside.
  2. In a large pot, bring 10 and 1/2 cups of water to a boil. Add diced onion and tomatoes to pot. Allow to simmer for 5 minutes.
  3. Add Sinigang package, and stew meat. Allow to boil for 10-15 minutes.
  4. Add radish, green beans, bak choy and okra (optional). Season with salt and pepper and add 1-2 tsp of fish sauce to taste.
  5. Cover pot and let simmer for 25 minutes, or until meat is tender. Let cool for 5 minutes before serving over a bowl of white rice.
